Best Banana Muffin Recipe
This is my best muffin recipe. It really works, and will use up bananas nearing the end of their prime!
AL's BASIC BANANA MUFFIN
3/4 cup all-purpose whole wheat flour
2/3 tsp baking powder
2/3 tsp baking soda
1/4 tsp salt
1 small egg, beaten
1/2 cup maple syrup (or 1/3 cup granulated white sugar)
1/4 cup unsalted butter, melted
2 bananas, mashed
1/2 cup or more of raisins
optionally add other fruit such as frozen wild blueberries
12 medium sized paper muffin cups
Add the raisins to a bowl of warm water.
Meanwhile, combine the dry ingredients: flour, baking powder, baking soda, and salt in a mixing bowl.
Thoroughly mix together the wet ingredients: beaten egg, maple syrup, melted butter, and mashed bananas.
If substituting sugar for maple syrup, just add the sugar to the wet ingredients instead of the maple syrup.
Drain the raisins and mix them into the wet ingredients.
Pour the wet ingredients into the dry ingredients and mix.
Stir just enough to moisten the batter throughout.
Have paper muffin cups ready in a metal muffin pan.
Fill each paper muffin cup with the batter, divided equally into 12 parts.
Bake in a preheated 375F oven for 20-30 minutes, or more, depending upon the amount and type of fruit added.
NOTE: Frozen fruit is best when NOT defrosted. Mix frozen fruit directly into the dry, flour mixture.
